Does HP Z420 can use for gaming and get good performance as gaming pc perform ? Possible to put latest GPU ?

Yes, you can. However, it would be a waste of money as those come with Quadros which you would need to replace. Additionally, the E5 CPU would be overkill for most games.

Better get a assembled gaming rig instead.
 
Yes, already going to change GPU, actually getting used server in cheap price that why planning to buy. Hey thanks for the input.
