I should have clarified because my situation is unique.
I don't sign in to use any Google service except for Google Pay and Play Store, both of which are on seperate accounts. All play store purchases are done through gift cards, so my personal payment information isn't shared between the two accounts. Similarly, all of my App store purchases are also done through gift cards.
My main computing devices are Apple, whether on a desktop, laptop or tablet and I am always signed in to my Apple account but with iCloud syncing disabled. So in my case, Apple has more access to my personal than Google, and I would not want to my day to day spending habits to be shared with Apple who also would have access to my browsing and media consumption habits.
It's important to note that Apple operating in the US doesn't capitulate to government pressure as easily as Apple operating outside the US.
