I second poha. Easy to cook, light on stomach and you can add whichever veggies you can find in your fridge for extra nutrition. I like to add scrambled eggs (scrambled separately) into it, In fact I have rarely eaten poha without scrambled eggs in it.
So many of you like dal + roti but not me as i was forced to eat that daily for dinner during my childhood which made me hate it forever. I can count number of times I take dal + roti in a year on my fingers.
