Yeah its been a trodden subject. But here goes again :

FPS : Half Life, deus ex
RPG : Baldur's gate 2
Multiplayer : Unreal Tournament
Real time Strategy : Age of empires 2
Turn based startegy : Heroes of Might and magic 3
Driving : Carmageddon
Adventure : Myst
Sports : Pro evolution soccer 4 ( though play it very less. )

Crap games I cant stop playing :D : Cricket 2005, Mortal Kombat 4, NFSU,
I dunno these games are deeply flawed, but I keep playing them nevertheless.
 
Racing : NFS Porsche!! (for the overall experience and the BEEEYYOOOOTIFOOOL driving experience!!) I also loved the non-racing parts of it. The buying used cars, repairing them and re-selling them, the way you could change each and every part of the ngine, brakes, sway bars, carbon fibre body parts, etc....

This game was AWESOME!!! Ooops... IS awesome!!

But if you include graphics, the NFS MW nudges ahead. But ONLY due to the nice graphics. What it loses out on customizability, it makes up for in the "storyline" and related things like Bounty, Heat Level, etc...

for strategy my personal fav is rome total war!! even after a year . i still play the game! and love everybit of kicking gaul ass!

oh yeah... Max Payne and Far Cry.... forgot these 2. Far Cry is good only for the graphics. I LOVED the game until I encountered those damn monsters.

Why does every nice game have to have monsters?? It is damn irritating.

And in a retro kind of no-brainer way, NFS 2. Amazing game. Brilliant time pass.

And how can I forget the GTA games?? GTA VC and GTA SA!!! The best games. PERIOD.

FPS : COR : EFBB, Farcry and Hl2

RPG : Haven't played fable yet and not much of a rpg player.

Multiplayer : CSS, Bf2

Driving : cmr 05,

Adventure : POP: SOT, Beyond good and evil.

Honourable mentions: GTA: SA, cold fear, painkiller !

Its the not big titles that surprise though cause they have a performance parameters set for them beforehand. Its the little surprises like riddick and far cry that are awesome :D

RPG - Dofus & Guild Wars if MMORPGS count.

Multiplayer - Q3 CPMA with OSP coming next.

RTS - DOTA if it comes under realtime strategy, Warcraft 3

Racing - NFS MW

Adventure/Third Person Shooter - Tomb Raider 1, 2 and 3

Sports - NBA Live Series for timepass

Multi Player FPS: Counter Strike Source, UT, Q3, UT2k4(In that order)

Driving : NFS:pU (As Nikhil said everything was just about the perfect in the game, The cars felt right, the speed felt right, The controls felt superb and damage was there)

And ofcourse the GTA series... POP : SOT, POP: WW(free form fighting system roxs) They were outright awasome...
