Have you one of those versions which come factory overclocked ? As those tend to give some probs I have heard.

I think the PSU is powerful enough for a single X1900XT, make sure its not a overheating issue.
 
Naah not an overheating issue temps dont go above 70C during heavy gaming(fear). Unless Atitool ,Ati catalyst control center are reading the temps wrong i dont think its a temp issue...
And yeah the PSU is mostly sold to pastrykunal:)
