PC Peripherals HTPC+graphics card+sound problem

Recently I made HTPC and It's gr8 apart from few things.

1) I am using Radeon 4350 PCI-E (512Mb, 1GB) gfx card. It has VGA, DVI out and S-video out. I can see video on TV (as LCD out of budget now!!) but I have to connect stereo-to-component cable for getting sound.
The card I have received has written 7.1 surround sound support.
Can anyone help me how can I pass sound through gfx card to TV.

2) Also volume level is same for all the channels currently (on TV it's different for each channel). How can I store different volume level for each channel if there is no way to use PC's stereo out

3) Currently I am using cable input. I tried using cable splitter to split cable signal (my parents don't want HTPC crap and want to see TV directly) but it deteriorates signal quality significantly. Any clues how to do it ?

For this, I think you need to use HDMI connection and that you can do only if your TV supports it.
