I also suggested Split Second...but there you have to takedown other cars using different objects and powerups. The game is very good and the destruction of the tracks is very cool. The whole stage changes in a matter of seconds. Kind of like the movie Death Race.

Thank you for mentioning the show here. It is awesome, I was looking for a new series and this is it. From the moment I looked at its intro on youtube, I was mindblown. And yeah Watch Dogs seems to be inspired from this show. :)
