As an update, I ended up buying the Sony WH-1000XM4. Got them on Saturday and have been using them over the weekend. Love them and I feel it was a good decision to go with the foldable XM4 instead of the XM5. The mic is okay at best which is the only con for me.

I would highly recommend picking up speakers from Edifier (specifically R1280T) on sale. They are amazing speakers and well worth the money. However, they are slightly above your budget so would recommend picking them up when prices go down.

In Bangalore, I found a full sim setup in a Play Arena. It had a Logitech G29 with shifter setup to play Formula 1. You could try to check if any such thing exists in Mumbai. Thrustmaster might be a bit difficult to find though.
