Is UPF the real issue here? I doubt. It's obesity and not being able to meet the recommended macro intake. All suggested 32 harmful effects are applicable for obesity as well for people who are not able to get enough nutrition. UPF was never the problem.
It depends on where you live, what your doctor advises, and also the availability of the vaccine for newer strains.

Yes, his comparison is flawed and he also weakens the device's security. He can use NextDNS or Adguard DNS to block ads and privacy invading DNS requests. He can also use VPN-based local firewall app which will allow him more control without compromising the Android security model.
He likely uses Android with root access enabled or a custom ROM with a firewall app like AFWall+ flashed to the system partition.
Personally, I'm not comfortable with that. iOS and Android don't come with root access enabled to prevent malicious apps from escalating and gaining system...
