I am currently facing issue with Apple maps. I uninstalled the app however it shows occupying around 1.72GB of storage. How can I remove this data?
There is a cloud symbol next to it, which could mean that when we delete the app, it is actually offloading the app but data remains. Most likely this is due to because Maps being the native app.
I think it will auto clear itself when your phone requires space and there is none left. Not sure. Try restarting.

My phone hardly had 800mb left but still the cache was not cleared. I have also tried reinstalling app and see if any offline maps are downloaded. The app showed no offline maps. Looks like a bug to me.
