Is there any reason to buy an Intel CPU over an AMD one these days?

On the lower ish end. Think the 9700x-9800x vs whatever the equivalent Intel hips are. more than 6 cores.

Any reason to choose intel over AMD? Not strictly related to gaming….

Yes, very few use case scenarios like Adobe. And there are 1% applications that work on only on Intel architecture (if I come across 1 will surely put it here).

I’d assume the intel integrated graphics work better for transcoding, if you are planning to host media streaming services without dedicated GPU…that would be one use case I suppose.
