So I do understand that a high Ampere cable is also required to fast charge the device but I also want to understand why some chargers of 100W have an output current rating of 3A?
Doesn't that limit those to not being able to deliver high watts?

And, yes, you do need a 5A cable. Most of the smartphone cables are smart these days. They have a chip inside that is constantly communicating with the device as well as the charger. Get a branded, high quality.
