Get FreeOCR and convert your files to word and edit them and again make PDF through MS Office.

I think latest edition of PDF Creator should help as it comes with an editor.

You can use OpenOffice/LibreOffice to create PDF documents. While they cannot edit the PDFs directly, if you create the source document in their native 'odt' format, you can always edit the source, and then regenerate the PDFs.
