Installing Custom ROMS on motorola defy - HELP!

All right, if you help me with this, you'll save my life (almost) literally. I'm breaking my head over this :S.

What is an SBF file? What is the difference between SBF and custom rom?

For flashing an SBF (whatever it is), there is a comprehensive tutorial for Motorola Droid here on this link: Using RSD Lite to flash an SBF file -- correctly - Droid Forum - Verizon Droid & the Motorola Droid Forum. Please confirm: It is essentially the same for Defy except that you have to press volume up instead of D-pad up, right?

I've currently installed custom recovery by tenfar ([Release] Clockwork MOD recovery for Moto Defy [Updated 2010-12-18 04:08 am CST] - xda-developers). But if I go into recovery the normal way (volume down+power button), it boots into stock recovery. WHY? Is it simply a kind of separate software that doesn't interfere with the normal recovery.

Can I go back to stock 2.1? I've made a backup through tenfar's recovery. Tutorials to install custom roms (like this one) are so complicated. To go back to stock a simple restore through custom recovery is enough? Can I go to 100% stock and claim warranty at any time?

Also, I'm currently interested in cm7. So any advice you give could be more specific to that.

And lastly, why can't I install rom manager? Koush's clockworkmod doesn't support defy. ROM manager would just make everything so much simpler :(.
 
See this is my journey of Motorola Defy frm stock 2.1 to 2.3.4 (i was on CM7 for abt 10 days then just 3 days ago shifted to MIUI 1..6.17)
u can't directly jump from 2.1 to 2.3,
that's why we need to install 2.2 first,
i installed Pays ROM (Froyo) first, here's a guide to how to do it : [ROM] Pays-ROM Defy v6.0 Froyo with Ginger feeling [3.4.2-164 official] - xda-developers
Then when you boot into Froyo, you are ready for CM7
Pays ROM might have Clockwork Mod already installed in it
then follow the steps here: [DEV][ROM] CyanogenMod 7 (Android 2.3.4) - xda-developers
It took me about 3-4 hours for this procedure (download of ROM's including)

{To go into Bootloader Mode, Reboot and hold "vol up + power"
To go into System Recovery, Reboot and hold "vol down + power" }
