Well i agree shooting via viewfinders do help in keeping the camera steady.These cameras do have in lens stabilization which will help.Do note not all Image stabilization are the same its performance varies from camera to camera.Most cheap p&s cameras use cheap OEM based ones.
Adding a viewfinder will increase the height of the camera,just sticking in a viewfinder won't help in ergonomics.NEX-3/5 ergonomics was designed with lcd in mind,if they do put a viewfinder they will have to change the grip,it will be quite uncomfortable or tricky to see through the viewfinder with the present ergonomics.
It has to be the size of the panasonic GH or G series if it were to have a good ergonomics,which are expensive and aren't that compact,but are quite comfortable.
If one does want a camera with a viewfinder,with a large sensor there is the fuji X100 it will probably cost around 80k and has a fixed lens.
