MKV ,M4V to AVI video Convertor

I have tried Any video converter to convert MKV to AVI . but the quality was bad.
i have used Video codec MPEG4 , frame size - 1920 x 1080,audio codec - mp3.
I'm a NOOB in terms of audio and video conversion.i have googled couldn't what i'm looking for.
The question is can i use the same converter with different settings or should i need to use other converters.

Use Mediacoder or Super for transcoding your video files. Mediacoder is fairly simple to use and yet has all the settings you could want. In general a 2-pass h.264 encode of appropriate bitrate should give you satisfactory encodes.

You can use Avidemux or even Xvid4psp. Both are wonderful converters and the video can be tweaked to your heart's content.
