OCR with HP AIO

I just bought a HP All-in-one Deskjet F2120. I came with a OCR software by IRIS. The software is not installed by default. You need to install it specifically.
I tried this software and it works on documents during scanning. However, I do have a lot of documents previously scanned and sent to me as jpg or pdf files. The HP UI gives me no ability to use the OCR to convert an existing jpg or PDF file to a editable document.
I feel that the IRIS software has the ability except that it is not exposed to the user since it is bundled with HP. Any ideas how I can work around this?
Is there any other freeware that will allow me to convert jpg or PDF images of book pages to editable text?
