If I upgrade from an Intel i3 7100 processor, Sapphire Radeon RX 560 4GB GPU, and 16GB (8GB+8GB) RAM to a Ryzen 5 3600 or Ryzen 3 3000G while keeping the GPU and RAM the same, how much will gaming performance improve?

If u are only going to play one game for the rest of the time and be satisfied with one chrome tab open at a time. Then dont upgrade. Else do upgrade. Only gaming performance should'nt be your requirement for upgrading!

Depends on the type of games you play, + monitor resolution (assuming it's 1080p).
 
Those website calculators are quite bad at real world benchmarks. A 3600 is going to be better CPU wise than a 4600g, AMD has confusing naming schemes. The 4600g is mostly for igpu which you dont need since you have a 560.

A 3600 is roughly i5-10400 level, quite a big upgrade from an i3-7100, but will your 560 actually be capable of using the added CPU power? In CPU heavy games like modded Minecraft, factorio, x4 certainly. Games like cs2,valo also will see a noticeable improvement especially on all low settings.

Yes. Its 1080p. Like call of duty black ops 6 or stalker 2..
Apart this 3600 or 3000g. Should i consider 4600g? My budget is tight.

How tight ? Black Ops 6 may run on low settings but Stalker 2 is quite intensive.
Get yourself a used RTX 3060 12GB or GTX 1080TI 11GB card if you can.
You should be able to get both used for less than INR 17500.
