I used to run two 60GB SSDs in RAID0, and though the speed boost is absolutely real in benchmarks (~600Mb/s read on a 880G chipset), in day-to-day applications a single drive feels just as quick.
I would recommend two individual SSDs over a single one, using the second one for programs that need that speed. Games, for example, have much longer level load times than they used to and SSDs really help in situations like large Photoshop file operations.
I just picked up a 3TB drive from Prime, which should reach me soon. I also have a set of 8 1.5 and 2TB WD Green drives bought over the years, all of which have demonstrated perfect behaviour. The first generation EACS drives were a little unreliable, but EADS onwards are working without a hiccup so far. Obviously, in spite of the slightly higher price, I chose a WD Green again. It's an internal drive and is probably not what you're looking for, but there it is.
