My watch ultra is sometimes a little laggy if you are doing continuous clicks on it.. but overall the experience is fine.. careful about the battery life to.. my watch does 2 days on a single full charge.. i would imagine the normal watch 7 would do 1 day only..
i think my Apple watch 9 45 did 1-1.5 days aswell.
Edit: i just checked.. its the same proc and almost the same battery -100mah on the normal watch 7 so you can expect similar performance and similar battery life.
is health tracking your priority or smartphone integration? if its the former, get a cheap garmin, even their 20-40k watches will be miles better than the crap peddled in Android ecosystem.

Yes Watch 3 is a massive improvement compared to watch 2 but its still nowhere near what apple offers, hell Watch SE 2022 handily beat it in most tests and its cheapest offering by Apple. And even leaving all that aside, this ****ing thing cant be repaired! Google said its replacement-only , yeah **** that shit.
