I currently am using the Samsung Watch 4 classic that is showing its age. I mostly need the watch for notifications, Fitness tracking, health and Sleep tracking and remote controlling phone(camera and music) . Good battery life is a must.

I'm waiting for the Samsung watch 8 to release but are their better options available?

I consider Samsung and Apple to be the best and most reliable especially for fitness tracking and health. And it's only a month away now, I'd wait.

Check Garmin. Im not sure if you cant control camera but music you can. Their fitness tracking and battery is among the best

If you have an iphone then the apple watch series 10 should be a no brainer, and for Android Samsung is your best choice, google is still early and needs to improve some things. As for Garmin, although their fitness tracking is excellent, the ui itself and the connectivity is a bit behind.
