If you had checked the video you'd know he shows and explains the exact same micron specs you're referring to and he's not wrong because with my 3070ti it throttles when mem temps reach 96c. While it's on the extreme case i.e with furmark and gaming pushes only till 90c max but in summers if does get to 96c then there'll be throttling.I refuse to believe in random video on the internet and do my own research and check datasheets instead.
The 2nd spoiler shows operating temp (measured on the surface of the chip) which is NOT the junction temp (inside the chip) which is reported in GPU-Z or HWinfo64. The junction temp can be higher upto 110C when the throttling starts.
