If you're talking about offline co-op then here are some:

Gears of War series
Left 4 Dead 1 & 2
Resident evil 5
Halo

There are many but this is what I remember now. There are tons of XBLA titles too. Like: Laracroft & the guardian of light, Castle crashers, bionic commando rearmed, etc.

All these games also offer online co-op.
