IMO the credit for that belongs to the infamous Sony Ericsson P series phones. They were the ones that popularized touch screen phones and demonstrated by their use of detachable keypads, that you don't really need to have a lot of physical buttons on a touch screen phone for it to be functional. iPhone is an evolutionary step forward and while it may have a few new things (while missing a lot of others), the credit for the tech itself does not entirely belong to Apple as they had acquired a majority of it by buying out other companies.
Steve Job's ability is not shaping tech or creating great products, but shaping the minds of the people. He can influence people to a great degree. He can convince a majority of people that they absolutely need to buy everything that they make regardless of how little use it may be to them. For Apple, loosing him would be fatal. The last time they had to do without him, they went as far as an inch away from annihilation.
