Urgent help regarding Updating and jailbreaking ipod

I have an ipod touch 4G and its jailbreakd ios 4.1 version. As it was not in much use, so i didnt bother to update it. Now, i want to update it to a stable version whose jailbreak is available (i want that permanent jailbreak, not the volatile one). when i connect it to itunes it asks to update but i think it will update my device to latest ios version whose Jailbreak should not be available i think.

So, anyone can guide me how can i update my ios to a latest version whose non volatile JB is available with least bugs and issues?
