What do you guys use PCIe slots for?

Usually for nothing except if you want more storage then you can install add-on-cards in pcie and reap the benefits. Apart from that front usb headers handle everything from bt, wifi and even sound cards these days while even mid-ranger mobos now come with onboard bt and wifi.
Pcie might even get phased out in coming yrs for desktop consumers boards.
 
Yeah for desktop use multiple PCIe slots is not that important, if you are happy with your onboard networking, storage and audio options. For flight sim, USB accessories should be all you need in addition to those, so if you have as many USB ports as the accessories you are planning to use you should be good (you can use hubs as well for more USB ports if needed).

This MB has 3 m.2 slots so storage should not be an issue.
