First time buyer in this segment. No idea on what requirements I might need. but below are the conditions I have sorted based on my understanding and research.
1) Need for Mom with back pain complaint. right now near left shoulder and spinal cord area.
2) 5" to 6" thickness based on here weight. 50 to 55kg!
3) she sleeps in both ways, i.e sideways and straight as well. now sure about hardness and softness thing here due to this.
4) she don't like sleeping in ac and so its ceiling fan for here, so the mattress should be breathable or with proper ventilation.
5) brands in mind, wakefil with washable cover included. don't mind other brands if fulfill this requirements.

Go to experience centre, test Orthopedic range of mattress, harder ones are better for spine. Use thinner pillows. - recommendation by our orthopedic doctor.
Don't go for soft/sinking ones - they lead to orthopedic problems - doctors' suggestion. No idea about brands/products as last ones we bought was 6-7 yrs ago.
Just my observation - not a recommendation.

PS - as @ibose suggested, consult doctor for pain issue first.

First consult a physician, they can advise the appropriate options
Doctors said a side effect of high sugar. not sure how. she is on meds for the same. But I know that her bed mattress is dead and needs to be dropped.

that's hard to find at my place :/ plus its not spin pain, its in between the shoulder and spin.
lets see!

Considering pain around the shoulder area with a history of diabetes, frozen shoulder (adhesive capsulitis- hard to move the joint), neuropathy (nerve damage-seen in long standing diabetics) are the culprits.
Make sure her blood sugar is maintained within the recommended limit with medications she is on right now. Controlling blood sugar level usually alleviates the pain. If the damage is due to chronic history of sugar/diabetes, then consult your doctor.
Also, she doesn't prefer AC because the cold environment causes low blood flow to the joints which increase stiffness along with swelling of the joints resulting in pain.

To be honest any decent mattress is fine as long as it is not too hard (like concrete) and not too soft (due to bad alignment and posture). Same goes for pillows. The height of pillow can be adjusted according to the need of the individual. In general, mattress on the stiff/hard side is recommended for patients with ortho related issues such as arthritis.
Usually "Orthopedic" "Doctor's recommended" "Most trusted" labels are a marketing strategy because there are no proper government regulations for using them.

The main stray to comfort is mandatory regular exercise, diet control and timely medications. With these three in check the pain will subside gradually if not disappear.

Best Wishes.

Diabetes aka High sugar wreaks havoc in human body, if goes out of control for long time leads to many chronic issues (not saying this to scare anyone, have one family member dealing with related issues).
If doctor says its neuropathy - consult Neuro-physician. Neuropathy is generally caused in sugar patients when sugar levels remain elevated for long time.
Follow diet plan, remain physically active. If currents medications doesn't control sugar levels, then consult senior Endocrinologist.

Even if you don't have mattress experience centres in your city - there must be a market where there are multiple mattress dealers. Visit them, check various soft/hard mattresses. Prefer one thats nearer to hard around 7-8. (0 being softest, 10 being hardest).
Don't fall in trap of ortho suggested brand and all, thats just money making exercise.
