I am on UPI but not on any "platform" like Gpay, PhonePe etc. They have created their interface such that it is not easy to transfer money to UPI member's that are not on those platforms. The private platforms are known to drop users for any slight, real or imaginary. The "real name policy" of Google+ resulted in people losing Gmail, maps, Google drive, YouTube (even their own channel).
Additionally, India is the country with by far the most government mandated internet shutdowns. In a riot/curfew like situation, where your life might depend on getting a gauze bandage, you are unlikely to be able to use internet to pay for it using gpay, phonepe etc.

Secondly, I exclusively use the SMS UPI, and no merchant/auto driver has ever accepted the payment as valid. So I make the payment using SMS UPI to people who can check their bank account and the payment is not an urgent one, or they trust me to some extent already. From this statement, I know your knowledge of these things is extremely bookish, so I will stop.
