Which DNS servers are best at safety/security/privacy point of view?

Google/OpenDNS/Cloudflare or any other?

Meant the ones that we set in router connected to internet.

I heard Quad9 with pihole is good for security and privacy,
Cloudflare is best for convenience
If you want adblocking in dns you may try nextdns,
But in my experience I had trouble using dns with adblocking some website may break or won't load, i had trouble with mullvad dns it didn't open income tax website for me and nextdns it didn't load gif in instagram.

Any of the above dns blocks ads if used on mobile phones btw? Currently using adguard dns under private dns option but it blocks many sponsored items
Not sure what you mean by the sponsored items as I would expect an ad blocker to block all sponsored ads. But NextDNS does work the same way if you configure it in Private DNS. You can set whitelist and blacklist if that's what you are interested. There's also RethinkDNS app which is also nice as it tracks every app and easy to configure and whitelist but occupies the VPN slot so cant be used with something like Tailscale but does support wireguard.

I'm a simple user who would like to have all ads blocked, not anything else. Sponsored items mean those which show sponsored label on amazon, or some which come under google search. Even other than those when i use adguard dns, apps like UTS doesn't work. I tried using the adguard app (from their website not play store) and it blocked only the ads and not other services. But, that app drains battery quite badly. Whitelist/blacklist I'm not sure, sounds too time consuming.

I am not sure I follow you. Do you want to see sponsored items? Those are all ads by the very definition. No one is gonna bother making a filter list with a whitelist for just amazon and google domains so you will not be able to find anything OOTB. I dont know what UTS but whitelist is very simple to do but assuming its an app, try RethinkDNS as you can just select which apps you want to bypass filter and show all ads. Super user friendly interface that even your grandma can easily use so just try that first. NextDNS is more focused for advance users and the features it offers might not interest you.

I use nextdns with hagezi normal filter it doenot block the Google search sponsor and almost all website works without breaking but eventually need to fiddle with filters and whitelist, to get it working, and i also have a macro like think that turns off private dns using routines+ in samsung.
You may try mullvad it's least invasive as far i used and only broke once by blocking income tax website but con is it has highest latency as you will be connected to london.
My setup is using nextdns with hagezi filter for mobile in private dns setting, and i am using firefox with ublock extension, have setup chrome to use cloudflare in chrome privacy settings so if a website breaks or don't open i copy paste link in chrome to verify it.
You may read this nextdns guide to config.
Or simple use brave browser it blocks ads doesn't break website.

I was using NextDNS but the free limit is breached within days. I am still using it for my server on which I run a VPN service. However, locally, simply use Adguard Home on my router because it is free. If that didn't exist, might have paid for NextDNS.
