So what most eateries do now, is they keep reusing deep fry oil for very long. The oil turns rancid (burnt). Rancid oil is very bad for your health in the long term but also gives you instant sore throat. In the old days, rancid oil used to smell nasty but these days oils are hydrogenated so they don't change taste or smell even after turning rancid.
Even reputed hotels like vitthal kamat (highway chain) are doing. You eat one vada and baam your vacation is ruined.
